Throughout the various phases of production, from the planting of new vines through to the bottling process, a huge amount of information is collected and stored. Climatic and technical data enable us to memorise the steps we have taken over the years. Analysis of the results enable us to evaluate our working practices as we consistently strive to refine and improve the wines we produce.
